Ingredients:

  • 1 cup Basmati rice
  • 500g chicken/mutton (or vegetarian option)
  • 1 large onion, finely sliced
  • 2 tomatoes, chopped
  • 1 tbsp ginger-garlic paste
  • 1/4 cup yogurt
  • 2 tsp biryani masala
  • 2 cloves, 2 cardamom pods, 1 bay leaf
  • 1 cinnamon stick, 1 star anise
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt to taste
  • Fresh coriander and mint leaves
  • 2 tbsp ghee or oil

Method:
1. Cook the Rice: Wash the rice thoroughly and soak it for about 30 minutes. In a large pot, bring water to a boil, add whole spices, and then cook the rice until it’s 70% done. Drain and set aside.
2. Prepare the Meat: In a separate pan, heat some oil and sauté onions until golden brown. Add ginger-garlic paste and chopped tomatoes, cooking until soft. Add your choice of meat and cook until it’s browned.
3. Combine: Add yogurt, biryani masala, turmeric, red chili powder, and salt to the meat, then cook until the meat is tender.
4. Layer the Biryani: In a heavy-bottomed pot, layer the partially cooked rice and meat mixture. Add fresh coriander and mint between the layers. Drizzle with ghee.
5. Cook on Dum: Seal the pot and cook on low heat for about 20-30 minutes. Serve hot with raita.
