Biryani Recipe: A Festive Rice Delight

- 2 cloves, 2 cardamom pods, 1 bay leaf
- 1 cinnamon stick, 1 star anise
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste

- 2 tbsp ghee or oil
Method:
1. Cook the Rice: Wash the rice thoroughly and soak it for about 30
minutes. In a large pot, bring water to a boil, add whole spices, and then cook
the rice until it’s 70% done. Drain and set aside.
2. Prepare the Meat: In a separate pan, heat some oil and sauté onions
until golden brown. Add ginger-garlic paste and chopped tomatoes, cooking until
soft. Add your choice of meat and cook until it’s browned.
3. Combine: Add yogurt, biryani masala, turmeric, red chili powder, and
salt to the meat, then cook until the meat is tender.
4. Layer the Biryani: In a heavy-bottomed pot, layer the partially cooked
rice and meat mixture. Add fresh coriander and mint between the layers. Drizzle
with ghee.
5. Cook on Dum: Seal the pot and cook on low heat for about 20-30 minutes.
Serve hot with raita.
